Salmon Nicoise
serves 4
Ingredients
2 ea 4-oz salmon fillets, cooked, cooled
10 oz green beans, cooked, cooled
2 ea eggs, hard-boiled, cooled, quartered lengthwise
8 ea black olives
1 T Greek yogurt
1 t red wine vinegar
1 T olive oil
Instructions
Whisk together the yogurt and vinegar, then season to taste. Toss with the beans, then plate.
Arrange the salmon and eggs on the beans, garnish with the olives and olive oil, and serve chilled.
